2 large carrots
1 medium onion
8 ounces lentils
1 tablespoon oil
Salt and pepper to taste (approximately 1 teaspoon)
Chop onion and add to a pot with 1 tablespoon of oil and cook until onions are translucent. Add a 2-3 cloves of chopped garlic and cook for less than a minute.
Add diced carrots, 8 ounces of lentils, salt and pepper.
Add 4 cups of water and boil over medium heat for 30 minutes.
(Note: If you like a thicker soup, keep boiling for another 10 minutes)
